Xenia Grill owner Kostantino­s Georgakopo­ulos says the Greeks are a proud culture, but not too proud to include a range of flavours in their authentic souvlaki. “We do the traditiona­l styles but then we also do a few fusions. We’ve got the smoky Texan American style, the jalapeño hottie with homemade chilli sauce, the Thai twist with lime dressing and coriander, and a vegetarian with a chickpea pattie.”
