Athenia owner Majid Pourbozorg­i knows the trick to good Greek food is fresh tastes best. “You need fresh meat to start with and fresh salads, and I am a chef as well so I know the ingredient­s can complement what else you’re putting in there. Like chicken goes very nice with garlic yoghurt. We chargrill the meat as it’s ordered. If you cook it too early it goes dry and cold. This way it’s better tasting.”
