MERMAID lattes? That’s so 2017.

If your mantra is new year, new me then you have to try this world-first creation that’s just dropped at Bam Bam Bakehouse.

Mermaid croissant creator Ursula Watts said people were going “bananas” for the OTT take on the classic French croissant.

“Mermaids are very in vogue,” she said.

“It all started with the mermaid latte. I think the blue sort of turns people off at first, but it’s weirdly delicious. So we decided to experiment with a totally original idea for a croissant. It uses the same blue spirulina as the latte, edible glitter and edible crystals.”

Inside the croissant is a fairy floss-flavoured filling.

“It’s filled with a fluffy cream that’s a gorgeous pink,” Ms Watts said.

“It’s going crazy on Instagram and they all sold out in our online pre-sale within 24 hours. It sucks for people who come into the store expecting to get one from the cabinet, but as a small business, it’s a pretty good problem to have.”

The croissants are only available in-store on select weekends. Pre-order online for $7.90.
