Local diners have until January 28 to experience the Lobster Shack pop-up at Broadbeach. For the main attraction of authentic lobster rolls, wildcaught Clearwater Maine lobster tail is slow cooked in a butter bath and served inside a toasted brioche bun with buttermilk slaw. The rolls are served with a side of parmesan truffle fries for $35 or with a glass of Veuve Clicquot champagne for $50. “We want to give our customers the chance to ball on a budget and experience lobster and champagne in a casual setting without blowing hundreds of dollars,” says Lobster Shack’s Ben Kagan.
