SPARKLY SLICE OF GUILT-FREE HEAVEN

IT’S sparkly and blue and at first glimpse looks like a sugary trap.

Behold – the healthy vegan mint slice.

Palm Beach cafe Third Base has put a sparkly spin on the classic mint slice, reinventin­g it with a healthy touch.

Cook Kate Nowland’s secret ingredient­s are spirulina and cacao chocolate. But cafe owners Kelly Singh and Marie Phillips said the slice is selling out daily because it is gluten free, refined sugar free and vegan.

“There is a huge demand for healthier options at cafes especially for us because we have regular customers who are looking for something that they can eat daily that won’t ruin their health,” Ms Singh said.

“I have loved mint slice since I was little so when our cook Kate Nowland served these up it was an amazing flashback and also the colour of them ‘wow’ everyone who walks in.”
