After a mammoth renovation, Elle Howard’s Mermaid Beach cafe is better than ever. “I’ve brought back my toasties, which you can make vegan using dairyfree cheese and meat-free ham,” Elle says. “I’ve also introduced a specialty smashed avo menu using the most amazing bread you will ever taste. It’s made with equal parts water to flour, so it’s moist and fluffy still on the inside after toasting. The signature is sourdough, avo, pickled onion, balsamic glaze and sriracha.”
