IT’S an Australia icon, under threat from foreign invaders but still retains a special place in our hearts – the humble lamington.

On Saturday, lamington lovers will rejoice as Australia celebrates National Lamington Day, a time to mark the creation of the unique treat that has its heritage in Queensland.

This Australian icon has gone gourmet to cater to the changing tastes of Australian­s.

Knowledge about its exact origin is as dark as its chocolate coating but it is widely accepted the lamington cake was first made in 1900, most likely for the wife of Queensland’s eighth governor, Lady May Lamington.

Lord and Lady Lamington were said to have been so impressed by the cake that it was regularly requested at Lamington House.

To this day the treat remains just as popular.

So what’s the secret to a good lamington?

According to Sticky Buns owner Marie Chamberlai­n, it’s all about the “passion and love put into making it”. “Our ‘lamington expert’ and chief baker Simon Fowler premakes the cake, lets it sit for a day, then makes the mixture to cover it,” Marie said.
