TREV NAILS THE MEAT AND GREET

SOMETIMES good people do get a great reward for their hard work. Local butcher Trevor Saville is a passionate advocate for his industry, devoting countless hours to the training and education of butchers in this country. At the last World Challenge, held in Ireland, Australia’s entry won first place for sausages with some delicious pork, truffle and provolone bangers. As the head technical judge, Trevor was invited to the US this week to throw a ‘snag on the barbie’ and showcase all that is great about our local meat products at some high profile events. In the past week Trevor has been a very busy boy, firstly at a charity golf day for Greg Norman (above) in New York and then to another with a charity tennis day starring Rod Laver. Finally it was on to a high powered barbecue at the Australian Embassy in Washington. Life on the Gold Coast may seem a little dull after Trevor’s week.
