FRESH CATCH READY TO SHOWCASE SKILLS

AS one of the only female executive chefs on the Gold Coast, Kathy Tindall (right) will lead the team launching the new Catch Restaurant at the Hilton Surfers Paradise

An industry veteran with more than 20 years experience in hospitalit­y, Ms Tindall is no stranger to hotel dining.

Having cooked in the kitchens of hotels for more than 13 years, she has worked all over the world and in some of Australia’s most renowned dining venues alongside the best in the business — including famed chef and restaurate­ur Luke Mangan.

“There was the excitement of a new challenge, combined with high expectatio­ns and a massive vision,” she said of the new restaurant launch.

The new venture has provided Ms Tindall with the opportunit­y to showcase her passion for fusing sustainabl­y sourced seafood and Asian influences.

Inspired by her time working in Singapore at Luke Mangan’s flagship Salt Grill and Sky Bar, Ms Tindall “marvels at the complexity and versatilit­y of Asian flavours”.

“So much of my history with cooking refers back to Asian influences,” she said.

“The flavours are easily infused with other foods, allowing me to be really inventive and creative.”
