This game-changing restaurant project is worth more than $10 million but the down-to-earth menu may surprise you, writes Chantay Logan

THERE may be a Michelin chef at the helm, but you’ll be able to savour Burleigh Pavilion’s oceanfront view on a burger and beer budget.

High-profile hotelier Ben May, owner of the landmark $10 million restaurant redevelopm­ent set to open early December, says head chef Guillaume Zika’s menu will be “casual and super accessible”.

“I think Guillaume is going known as The Tropic and occupies the side of the building formerly home to Oskars, steps it up another notch.

“It’ll be refined bistro fare – but still nothing to do with fine dining,” Guillaume says.

“More elegant dishes that are good to share. We’re going to have a big firepit, so a lot of the menu will be based around that … a lot of grilled seafood, wood-fired cooking.”
