A NEW Vietnamese restaurant offering healthy and traditiona­l cuisine will open today in the Kmart Stockland Centre.

Vietnamese Colour will serve authentic Vietnamese cuisine such as Pho, a traditiona­l rice noodle soup, spring rolls, and Bun Thit Nuong which is chargrille­d pork served with vermicelli noodles.

The restaurant is decorated with bamboo and photograph­s of landmarks in Vietnam with enough seating for 40 or more people.

Vietnamese Colour director Tuyen Quang Pham’s fresh and healthy Vietnamese food earned a cult following after opening Vietnamese Corner in Kirwan before he sold the business.

He decided to open another restaurant which would offer more seating and provide a more up- market experience.

“Vietnamese Corner was very small and didn’t have much space to sit down inside so my customers were complainin­g when they eat it is too hot,” Mr Pham said.

“Stockland has supported me and I have more than 100sq m of space here.

“It’s a really busy shopping centre and a good location.”

Mr Pham moved from Vietnam to Darwin 11 years ago, before moving to Townsville.

He said while he had cooked cuisines from all over the world his speciality was Vietnamese food and many of the recipes on the menu were inspired from meals he would cook his family in Vietnam.

“I love cooking so I have cooked a lot of types of foods from American, to Western, Mexican but I just love Vietnamese food and I try to cook things that are very traditiona­l from Vietnam.

“Cooking Vietnamese food is my passion.”
