Ingham choc- full of Italian delights

INGHAM will show off its credential­s as the Little Italy of North Queensland this weekend, with thousands expected to flock to the town for the Australian Italian Festival.

Deborah Coward from Townsville business Not Only Cannoli has been in Ingham all week preparing for the festival, apart from a trip back to Townsville to carry out regular deliveries.

The business will be serving up cannoli, lasagne and meatballs with sauce with polenta across the weekend to help feed the hungry crowds.

“We’re doing meat and vegetable lasagne so we’ve been preparing the filling and sauce and freezing them for weeks,” Ms Coward said.

Where the business usually serves up custard- filled cannoli, for the festival they will use ricotta, the Sicilian style.

“From the moment you start, you’re flat out until late at night,” Ms Coward said.

“There’s sometimes a quiet time in the afternoon, that’s when my husband and I take our four- yearold for a walk. You do get your regulars that come back each year but you get new people as well.”

Ms Coward, who grew up in Ingham, said it was always nice to be part of the festival.

Gates will open at the Australian Italian Festival today from 10am to 11.30pm and tomorrow from 10am to 3pm.
