Theresa shares a family favourite

The Gazette has put out a call for readers to send in their favourite ANZAC biscuits recipe and a photograph of them baking or eating the traditiona­l treat.

This recipe was sent to us from Theresa Peters who was inspired by our Facebook post to make an all-time favourite recipe in her family.

Theresa said she had been making ANZAC biscuits for her family since she was young.

She said she used to make them for her brother Peter to eat after work and they were his favourite biscuit.

“It was the only time he never opened up the oven. He used to always play tricks on me ‘til one day I stopped baking them and he stopped opening up the oven on me,” she said.

Theresa also loved making them for her son Dylan.

She said it was the first time in years she had baked the family favourite when she made them on the weekend.

Theresa’s Recipe:

1 cup plan flour

1 cup rolled oats

1 cup brown sugar

1 cup desiccated coconut

125 grams butter

1 tsp golden syrup

1 tbsp hot water 1 tsp bicarbonat­e soda

Method: Preheat oven to 175 degrees Celsius. Combine dry ingredient­s in a large bowl. Mix well and set aside.

Melt butter in a small saucepan then add golden syrup. Bring to the boil and then remove from stove.

Mix hot water and bicarbonat­e soda together and add to the syrup mixture – mix until it froths up then add to the dry ingredient­s.

If the mixture is a little dry, add a little hot water. Take spoonfuls of the mixture and roll into balls. Place on baking paper on trays and push down with a fork. Biscuits should be about 5cm apart on tray.

Bake for 15 minutes then cool on a wire rack.
