How did you get the gig? I opened Tribeca NYC on Christmas Eve in 2014 with my mum Carolyn Thompson and brother Shannon.

What do you love about the GC? I love everything about the Coast. The lifestyle, the diversity of the people that live and visit here, the weather and beach and how there is always something to do here.

What is the most popular coffee? The top three would be an espresso martini, cappuccino and iced coffee. We use Dimattina which is one of the best boutique coffees in Australia. Our clientele is diverse, from corporate people to locals and families holidaying on the Coast.

If you weren’t working here, where would you be working? I would be travelling around the world and picking up work where I go — still in hospitalit­y though. But I love my current job.

What are your future plans? Keep striving to be better and keep pushing and elevating our guest/ clients’ experience at Tribeca NYC.

How do you spend your free time? The little free time I do have I spend being active, whether I am hitting the beach or playing golf. I also am a massive foodie, so I love getting out and trying different restaurant­s.

What’s your best advice for people considerin­g opening a cafe? You need to have a point of difference otherwise you will be a jack of all trades, master of none. Do your research and understand what your clients want. Also, try to remember to have fun with it all.
