TRUFFLES THE STAR ATTRACTION
IT’S open season on truffles at The Star Gold Coast this weekend .
As part of their Truffle Season celebrations, the casino has unveiled truffle-infused menus at their most popular restaurants to celebrate the expensive delicacy.
Often described as one of the most expensive ingredients in the world, truffles are a notoriously hard to find fungi, like a mushroom.
Head chef at Kiyomi, Winson Law, said his team was aiming to combine Australian ingredients with the truffles in their dishes.
“We’ve also got some Japanese Kagoshima wagyu, with some grilled spring onions truffles,” he said.
“Truffles are quite rare in Australia, it’s grown only with specific trees, it’s pretty exclusive. It’s hard to describe but it’s quite earthy, nutty.”
Popular restaurants Cucina Vivo and Imperial will also be featuring truffle-inspired dishes.
Executive chef at Kiyomi, Chase Kojima, said the allure of the so-called “black diamonds” of the culinary world would appeal to the Coast.
“We have sourced the finest product from Australian truffle forests famed for producing some of the most revered black truffles.”
