BARBECUED PORK RIBS

SERVES 6 PREP 10 MINS + MARINATING COOK 1 HOUR 5 MINS PER SERVE 4649kj COST

½ cup tomato sauce ¼ cup honey 2 tbsp hoisin sauce 2 tbsp soy sauce 1 tbsp mustard powder 2 garlic cloves, crushed 1 ½ kg American-style pork spare ribs 6 thin sausages 4 x 200g beef scotch fillet steaks micro parsley, coleslaw, to serve CARAMELISE­D ONION 25g butter 2 tbsp extra-virgin olive oil 6 large onions, sliced

1 In a small dish, combine tomato sauce, honey,ey, hoisin, soy, mustard and garlic. Add ribs, turninging to coat. Cover and chill at least 1 hour. 2 Preheat a covered barbecue to slow, 150°CC (or use your oven). Line a baking pan with foil. Place ribs on rack in pan. Barbecue, covered, 1 hour, turning once. 3 CARAMELISE­D ONION Preheat a grill plate on high. Add butter and oil to plate. Cook onion 8-10 minutes, until golden and tender. Push to one side. 4 Cook ribs with sausages 10-15 minutes, turning occasional­ly and basting ribs with remaining marinade until golden and crisp. 5 Brush steaks with oil and season well. Barbecue 2-3 minutes each side, or to taste. Rest, loosely covered with foil, 5 minutes. 6 Slice ribs and serve with steak, sausages and onion, scattered with micro parsley andd accompanie­d with coleslaw.
