QUICK SAUSAGE PENNE PASTA

500g penne 2 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, crushed 500g Italian style pork sausages, skin removed, meat crumbled ½ cup red wine ½ cup chargrille­d capsicum 1 cup tomato passata ½ tsp dried chilli flakes micro basil leaves, grated parmesan, crusty bread, salad, to serve

1 Cook pasta following packet instructio­ns. Drain well, return to pan and keep warm. 2 Meanwhile, in a large frying pan, heat oil on medium. Saute onion and garlic 3-4 minutes, until tender. 3 Increase heat to high. Add sausage mince to pan, breaking up with the back of a wooden spoon. Cook 4-5 minutes, until well browned. 4 Stir in wine to deglaze pan. Add capsicum. Stir in passata and chilli and simmer 4-5 minutes, until sauce reduces by one-third. 5 Drain pasta and toss through sauce to coat well. Serve topped with basil and parmesan. Accompany with crusty bread and a salad, if liked.
