MASSAMAN SAUSAGE CURRY

SERVES 4 PREP 15 MINS COOK 20 MINS PER SERVE 2893kj

1 tbsp peanut oil 500g thick beef sausages 1 onion, thinly sliced ½ cup massaman curry paste 270ml can coconut cream 1 cup beef stock 2 star anise 1 stick cinnamon, quill 500g baby new potatoes, 5mm slices 150g green beans, trimmed ¼ cup roasted flaked almonds steamed rice, to serve

1 In a large saucepan, heat oil on medium. Cook sausages 6 minutes, turning, until evenly browned. Remove from pan. 2 Using same pan, increase heat to high. Saute onion 3-4 minutes, until softened. Add curry paste and cook 1 minute, stirring, being careful not to burn. Stir in coconut cream and stock with whole spices. Bring to a simmer. 3 Thickly slice sausages and return to pan with potatoes. Simmer on low heat, covered, 15 minutes, adding beans for final 2 minutes. 4 Season with fish sauce, sugar and lime juice (see tip). Sprinkle with nuts and serve with rice.

F TIP To enhance the flavours of your finished curry, add a little fish sauce for saltiness, brown sugar for sweetness and lime juice for a bright burst of sour. Add 1 tsp at a time, tasting as you go to check flavour.
