My favourite recipe!
This was Mum’s recipe. It’s my – and my family’s – ultimate comfort food.
BEEF & BEER CASSEROLE
SERVES 4 F olive oil F 1 cup plain flour F salt, pepper F 600g diced gravy beef F 500g potatoes, peeled, chunks F 2 onions, diced F 2 carrots, sliced F 125g green beans, halved F 2 celery stalks, diced F 375ml beer F 300ml chicken stock F 2 tbsp Worcestershire sauce Tur Turn slow cooker on low. Heat a large frying pan on high. Add olive oil to coat. Place flour and salt and pepper in a large ziplock bag. Add half beef. Toss to coat. Fry until golden. Place in slow cooker. Repeat with remaining meat, reserving flour. Add a little more oil to pan, along with vegetables. Toss in oil to coat. Cook 5 minutes. Place in slow cooker. Add a little more oil to pan, along with remaining flour. Whisk quickly while adding beer, stock and Worcestershire sauce. Stir well. Pour over meat and vegetables in slow cooker.er.
