SERVES 4 PREP 20 MINS + MARINATING COOK 20 MINS PER SERVE 2200kj

✦ 400g beef mince ✦ 4 cloves garlic, crushed ✦ 1 tbsp soy sauce, plus extra, to serve ✦ 1 tsp caster sugar ✦ ½ tsp chilli powder (optional) ✦ 1½ cups sushi rice ✦ 1 Lebanese cucumber, seeded, in 5cm batons ✦ 1 tsp salt ✦ 1 tbsp vegetable oil ✦ 2 green onions, thinly sliced ✦ 2 carrots, peeled, julienned ✦ 2 tsp sesame oil ✦ 100g shiitake mushrooms, thinly sliced ✦ 60g baby spinach leaves ✦ 4 eggs, fried ✦ 1 roasted nori sheet, finely chopped ✦ toasted sesame seeds, to serve

1 In a bowl, combine mince, 2 garlic cloves, soy, sugar and chilli. Mix well, then marinate 15 mins.

2 In a large saucepan, cook rice following packet instructio­ns. Keep warm.

3 Place cucumber in a bowl. Sprinkle with salt. Stand 15 mins until slightly soft. Rinse and drain.

4 In a frying pan, heat oil on high. Brown mince, breaking up lumps, 7-8 mins. Add onion. Cook 2 mins. Transfer to a bowl. Cover to keep warm.

5 Using the same pan, cook carrot in half the sesame oil with 1 garlic clove for 2 mins. Set aside.

6 Toss mushroom in remaining sesame oil and garlic. Cook 2-3 mins until browned. Set aside. 7 Add spinach to pan. Cook 1 min until wilted. 8 Spoon rice into bowls. Top with mince, vegetables and an egg. Sprinkle with nori and sesame seeds.
