Fire up the barbie for an easy way to entertain a crowd

The sun’s out, the cicadas are chirping and it’s the perfect time to have friends and family over to celebrate the festive season. Nothing beats passing platters of delicious barbecued seafood around to share, so follow Aussie chef and Coles Fresh Advisor Curtis Stone’s simple tips for perfectly cooked fish!

The trick to cooking delicate seafood is all about making sure your BBQ is prepped and at the right temperatur­e. “Barbecue your fish on hot and clean barbecue grates,” says Curtis. “And lightly oil the fish before cooking to make sure it doesn’t stick to the grates.”

If you always have trouble flipping seafood without it falling apart, apart it might be time to invest in some new tools. “When turning fish over on the barbecue, use a thin metal spatula called a fish spatula,” advises Curtis. “The sturdy thin spatula makes it easier to deal with the delicate fish. If your fish sticks while going to lift it with your spatula, allow it to cook a little longer to release itself from the barbecue grates.”

For something different, try experiment­ing to create different flavours. “Consider indirectly indirectl cooking fish – like salmon – on the barbecue,” explains Curtis. “You can add smoke chips to the barbecue to create a smoky flavour.”

When it comes to seafood, quality is key so make sure you are buying the best you can. “No matter what cooking g method you choose, make sure to select the freshest seafood from your supermarke­t or fishmonger,” says Curtis.
