PEA & ZUCCHINI FRITTERS
SERVES 4 PREP 5 MINS COOK 10 MINS
◆ 1 cup self-raising flour
◆ 2 eggs
◆ 1/ cup milk

◆ 1 cup frozen peas
◆ 2 zucchini, grated, plus 1 zucchini, sliced
◆ 100g fetta, crumbled
◆ ¼ cup chopped mint
◆ Vegetable oil, for shallow frying
◆ cherry tomato, fetta, pea and mint salad, to serve
1 In a large bowl, whisk flour, eggs and milk together. Add peas, zucchini, fetta and mint. Season and mix.
2 In batches, shallow-fry 1/ cup
3 fritter mixture 2 mins on medium. Top each with 2 zucchini slices. Turn and fry 2 mins until cooked. Drain.
3 Serve fritters with halved cherry tomatoes, crumbled fetta, extra peas and mint.
