XO FUDGE
MAKES 36 PREP 15 MINS + CHILLING COOK 5 MINS
◆ 400g dark chocolate, finely chopped
◆ 395g can sweetened condensed milk
◆ 180g unsalted butter, finely chopped
◆ 80g white chocolate, melted, to decorate
1 Grease a shallow 20cm square cake pan. Line base and sides with baking paper.
2 Place chocolate, milk and butter in a medium heavy-based saucepan on low heat. Cook, stirring occasionally, for 5 mins, until melted, combined and smooth.
3 Pour chocolate mixture into prepared pan and smooth surface. Chill for 6 hours until firm. Remove from pan. Trim edges of fudge (18cm square). Cut into 36 squares (3cm each).
4 Place white chocolate in a small food storage bag and snip a small corner. Pipe white chocolate X and O onto fudge to decorate. Allow to set. Serve.
