Whip up a sparkling new twist on the old Aussie favourite

Draw an 18-20cm circle on a large piece of baking paper with a pencil. Place on a large baking tray, set aside. In a clean bowl, using an electric mixer with whisk attached, whisk 6 egg whites with ½ tsp cream of tartar until foamy. In a separate bowl, mix together 1 cup caster sugar and ½ cup brown sugar. With the motor of the mixer running, continue to whisk egg whites and add a spoon of the sugar at a time, until the meringue is thick and glossy (this should take around 15 mins). Fold through 1 tbsp cornflour and 1 tsp vanilla extract. Spoon onto prepared tray and shape into a round. Place into 180°C preheated oven and immediatel­y reduce the temperatur­e to 120°C. Bake 50 mins, turn oven off, leave pavlova inside and allow to cool completely. Meanwhile, place 250g raspberrie­s, 250g blueberrie­s and 400g hulled and sliced strawberri­es in a bowl. Toss with ¼ cup caster sugar and mix through 1 cup Zonte’s Bolle

Felici Prosecco. Refrigerat­e 30 mins, stirring occasional­ly. Whisk 200ml thickened cream, 1 tbsp icing sugar and 1 tsp vanilla paste until soft peaks form. Remove pavlova from oven, peel off paper and place on a serving platter. Drain berries, discard liquid. Top with cream and berries.
