From grinder to cup, serving coffee may seem simple enough for any establishment; however there are many aspects to consider when choosing the right coffee ware. Their purchase and maintenance can improve the ROI of an establishment and even create new footfall, as clients are continuously in search of a good cup of coffee.

Mougharbel mentions that a good quality coffee machine should last a minimum of five years, and can last even longer depending on how it is maintained. “An espresso machine is the most important investment when opening a coffee shop and, depending on the level of production, these machines range from manual to fully-automatic.” Mougharbel says. “A coffee grinder is also a necessity in addition to an espresso machine and, in order to have a tasty blend, they should both be good quality products.” Mougharbel also adds that they should be cleaned regularly from the inside out, and serviced and inspected regularly by a specialist, in order for them to last longer.

Coffee clients order lattes, cappuccinos, mochas, and other espressobased coffee drinks which are the bulk of an establishment’s coffee revenues, in addition to plain coffee. Chaptini says, “In addition to considering the certifications, brand, plumbing requirements, number of brewing heads, and boiler capacity when purchasing an espresso machine, the biggest enemy of espresso machines is mineral buildup. If the user requires highvolume coffee production, distilled water must be used or a water-softener should be installed in-line with the water supply to the espresso machine, so as to prevent clogging, which compromises consistency and even damages the machine.” Chaptini states that the new technology in coffee machines will focus on fully automatic machines and portioned capsules, which improve consistency.

In order to stand out from the competition, coffee machine innovations and upgrades not only improve ROI even further, they also improve consistency and prevent waste due to human error. In order to keep a coffee machine in good technical condition over a long period of time, Khalil recommends changing the filters and gaskets regularly. “Innovations and upgrades such as the Termodrive® (a new device that allows adjustment of the water temperature for each individual group head without turning of the coffee machine) and the Turbosteam® (a steam valve with temperature sensor which uses an air pump to generate and supply an air and steam mixture to foam milk in large quantities and can also provide steam without air) allow establishments to provide clients with coffee beverages as per their individual preferences, in addition to improving quality and comfort for the baristas preparing them.” Also, Khalil mentions that a well maintained, professional coffee machine can last up to 30 years and will still prepare excellent coffee.
