A WHOLESOME ASIANINSPI­RED SALAD

Choosing food options that are healthy and wholesome, will go a long way in improving your health and well-being. Vegetables are a great option for anyone who wants to detox and clean out their system, and also add the much-needed nutrients and vitamins that help boost your energy, keep you strong mentally and physically.

**NOTE: For this dish, add more or less vegetables as you desire. This recipe adapts easily to your individual taste, and you can supplement the ingredient­s based on what is seasonal in your area or available at your local store or vegetable market.

INGREDIENT­S

*Two cups of chopped and thinly sliced cabbage. To add a bit of colour, you can also use both green and red cabbage.

*Large leaves of lettuce

*One pound of cooked shrimp (you can supplement with chicken) *A large packet of thin noodles

*Salt and pepper to taste

*Half of an orange pepper

*Half of a yellow pepper

*Half of a red pepper

*Half of English cucumber; sliced in half and then chopped

*One jalapeno; seeded and chopped

*A handful of peas

*Twenty leaves of chopped mint

*Ten large leaves of basil

*Avocado to garnish

DRESSING

*Three tablespoon­s of honey

*Three tablespoon­s fish sauce found in the Asian section of the grocery store

*One table

*Three tablespoon­s of vinegar

*Two tablespoon­s of water

*The juice of two squeezed limes (or lemon) *Two diced garlic cloves (or 1/4 tablespoon of garlic powder

INSTRUCTIO­NS

-Soak your rice noodles in a bowl/pot of warm water. Then make the dressing as it gets better the longer it stands. For the dressing, combine all the ingredient­s, stir them together and set aside. -When you are finished making your dressing, your noodles are likely to be done. Rinse them with cold water so that they are no longer hot. Then, season the noodles with salt and black pepper to taste. Cut noodles into smaller pieces then set aside. -Chop all your vegetables then toss them with the rice noodles and the dressing. Use the lettuce as wrappers for the salad, or you can chop and add to the salad. When complete, garnish with onions, avocado and sliced lime or lemon, as well as any leftover herbs.
