STIR FRY EGG NOODLES WITH CHICKEN

Preparatio­n time: 20 minutes

If you are looking for quick to prepare, healthy and wholesome meals, then this dish is for you. It is affordable and easy to make. Plus, you get to decide if you want to enjoy it plain or add a gourmet twist to the dish.

Note that this recipe is for one person, so increase the portions for more people.

*Two chicken breasts or several chicken strips (you can choose any kind of chicken you like) *A large pack or two small packs of noodles *Two eggs

*Three cloves of crushed garlic *Halved or chopped mushrooms.

*A cup of mixed vegetables or diced veggies *One tablespoon of dark soy sauce (you can use any favourite cooking sauce)

*Two teaspoons of sesame or olive oil

METHOD

Heat up the frying pan and add one or two tablespoon­s of oil.

Fry the garlic and chicken together. Toss well and cook for two minutes.

Push the chicken on one side and add in the egg. Scramble the egg and mix with chicken.

Add the tablespoon of sauce and mix well. Transfer the chicken and egg into a bowl. Heat up the frying pan again with 2-3 tablespoon­s of cooking oil. Then add the noodles and toss gently every minute, and cook for three minutes.

Add in the sauce mixture. Toss well, doing it gently so that you don’t break up the noodles.

Add half of the mixed vegetables and mushrooms. Toss gently and cook for one minute only, so that the vegetables still retain their crunchy texture. Add in the chicken and egg.

Mix all the ingredient­s together.

Serve as you please. You can put more vegetables on top and add garnish.
