MUSHROOM STROGANOFF

This delicious and easy to prepare meal is ideal for both vegans and meat lovers. The key ingredient is mushrooms - and so its up to you whether you want to add meat or not. If you are looking to prepare a simple soulful dish, then we suggest this stroganoff dish, which is not only easy to prepare, but is also delicious and filling. The good thing about this dish is that it takes just one pot to make, and is prepared within an hour (or less).

NB: This recipe is for four people

Preparatio­n time: 10 minutes Cooking time: 40 minutes

Ingredient­s:

* Button mushrooms (about 250g) *About 350 of beef or chicken, sliced into stripes (optional)

*Salt *Pepper

*Two tablespoon­s of olive oil *One tablespoon of butter

*Two onions, cut into quarters and the layers separated

*A quarter cup of wine (optional) *One tablespoon of flour

*One cup of cream or sour cream *One tablespoon of mustard *Half a teaspoon each of paprika and white pepper

*Fresh parsley

*One green pepper cut into chunks.

(Note that you would have to prepare the pasta of your choice to serve it with, separately).

Directions:

1. Cut the large mushrooms into chunks and keep the smaller ones whole. If you are including meat, season it with salt and pepper.

2. Heat the oil in a deep pan, and fry the meat in batches until done. Remove and set aside.

3. In the same pan, melt the butter and fry the onions until soft. Add the mushrooms and stir-fry for two minutes. Add the wine (if you are using it) and stir-fry until most of the liquid has evaporated.

4. Sprinkle the flour over and stir through.

Turn down the heat, then add the cream or sour cream, stirring continuous­ly until it starts thickening.

5.Add the mustard, white pepper, paprika and green pepper, and then mix well. Simmer slowly for five minutes. Add the meat and season with more salt and pepper if needed.

6. Serve the mushroom stroganoff on the cooked pasta, and garnish with fresh parsley.
