Bean and Potato Curry

Let’s admit it – eating meat every single day is too much… But meat-free meals need not be bland as one would imagine. Contrary to common perception, meat-free meals don’t have to be dull and boring. Take this below recipe for example; the potatoes and beans give you a filling wholesomen­ess, and the herbs give the dish the taste and flavours that will leave you licking your lips.

This recipe serves four people

Preparatio­n time: 20 minutes Cooking time: 30 minutes

INGREDIENT­S:

*Two cups of cooked butter beans *Three large potatoes, chopped *Three tablespoon­s (45ml) of coconut oil *One teaspoon of peppercorn­s *One cinnamon stick

*One tablespoon of hot curry powder *One teaspoon cumin

*One onion, chopped n of ground coriander

*One teaspoon of garama masala *One teaspoon of ground turmeric *Three garlic cloves, crushed

*One thumb sized fresh ginger, chopped *Two large tomatoes, chopped *One tablespoon of tomato paste *One cup of dried apricots

*Two cups (500ml) of water

*Salt and pepper

*Cooked rice, for serving

*Fresh coriander, for serving *Natural yoghurt, for serving

DIRECTIONS:

1. Heat coconut oil, and fry peppercorn­s, cinnamon stick and cumin.

2. Add onion, garlic, ginger, curry powder, ground coriander, garama masala and turmeric. Mix well.

3. Add beans and potatoes. Cook for 4-5 minutes.

4. Add tomatoes, tomato paste, apricots and water. Season with salt and water. Cover with a lid and cook until potatoes are tender.

5. Set aside, and allow to cool for a few minutes.

6. Serve with rice, fresh coriander and the yoghurt.
