Many of Mumbai’s internatio­nal restaurant­s offer broad menus encompassi­ng a range of global cuisine, but Amadeus bucks the trend by dishing up innovative Levantine, Spanish and Eastern Mediterran­ean dishes – albeit adapted to suit the local palate. Another of Farrokh Khambata’s eateries, it’s located in the city’s theater district. The elegant space sets the tone for the masterful blend of unfamiliar flavors – linger on the extensive tapas menu, nibble on crispy prawns wrapped in turkey bacon, and zingy mustardinf­used, stuffed piquillo peppers. Try the Marisco de Rosa paella, with lobster, calamari, shrimp and mussels plucked from the ocean that day. Sign off with a delicate crème Catalan.
