Brian Otto is the chair of Barley Council of Canada and also operates a 4,000- acre grain farm near Warner, Alta. “Canada is world- renowned for our barley quality,” he explains, with Alberta barley in demand throughout North America and Asia. “Traditiona­lly in Alberta, about 25% of the barley grown in Alberta goes into malt.” This malt is often used for brewing, distilling and to make beer. It’s a balancing act for farmers to ensure good quality barley. Brian says it’s about having the right amount of fertilizer programs and the amount of protein in the barley as well as the yield. When it comes to beer, “Molson Canadian is probably my favourite.” And in pairing beer with good food, Brian knows what he likes. “There’s nothing better than a good hamburger and fries and a beer. Although, I’m not adverse to a good Alberta steak with a potato and beer.”
