THE PERCENTAGE of Canadians willing to pay extra for enhanced in-flight food on long-haul flights, according to the results of a late-2017 survey conducted by Emirates Airline. That result should please Emirates, which operates a 24-hour kitchen in Dubai that sees 1,200 chefs create 12,450 recipes, focusing on authentic local cuisine, to service 590 daily flights.
