Yogurt is pasteurize­d homogenize­d milk that’s been fermented by lactic acid, thickening it and giving it the tangy flavour it’s known for. The dense, thick consistenc­y of Greek yogurt makes it a lower-fat substitute for sour cream and the best choice for creamy dips. Balkan-style yogurt, on the other hand, is better suited to less thick dressings and sauces.
