These delicious sauces offer a new take on traditiona­l Thanksgivi­ng flavours.

I F YOU WANT A shortcut version of everyone’s favourite turkey topper:

CREAMY HER BED GRAVY

In saucepan, melt 1 tbsp butter over mediumhigh heat; cook 3 cloves garlic, minced, and 2 tsp chopped fresh thyme, stirring, until fragrant, about 1 minute. Pour in 2 cups sodium-reduced chicken broth; bring to simmer and cook until slightly reduced, about 5 minutes. Stir in ⅓ cup whipping cream (35%), 2 tsp grainy mustard, ¼ tsp pepper and pinch salt. Whisk 3 tbsp cornstarch with 3 tbsp water; stir into broth mixture and cook, stirring, until thickened, about 1 minute. Makes about 2½ cups.

PER 1 TBSP: about 13 cal, trace pro, 1 g total fat (1 g sat. fat), 1 g carb (trace dietary fibre, trace sugar), 3 mg chol, 36 mg sodium, 3 mg potassium. % RDI: 1% vit A. I F YOU WANT A grill-inspired variation on the classic Thanksgivi­ng condiment:

CRANBERRY BARBECUE SAUCE

In saucepan, bring 2 cups bottled strained tomatoes (passata), ½ cup packed brown sugar, ½ cup fancy molasses, 3 tbsp red wine vinegar, 1½ tsp onion powder, 1 tsp garlic powder, ¾ tsp salt and ¼ cup water to boil. Reduce heat and simmer, stirring occasional­ly, until slightly thickened, about 15 minutes. Add 2 cups fresh or frozen cranberrie­s; cook, stirring occasional­ly, until cranberrie­s are beginning to break down, about 10 minutes. Let cool completely. Makes about 3 cups.

CHIMICHURR­I SAUCE

In food processor, pulse together 5 cups packed fresh parsley; 1 cup packed fresh cilantro; 4 green onions, cut crosswise in thirds; ¼ cup red wine vinegar; 1 clove garlic; ½ tsp salt; ¼ tsp pepper; and pinch hot pepper flakes. With motor running, add ¾ cup extra-virgin olive oil in thin steady stream, blending until smooth and adding up to ¼ cup water if needed to reach desired consistenc­y. Makes about 2 cups.
