CARROT SLAW

In large bowl, whisk together 3 tbsp extra-virgin olive oil, 4 tsp cider vinegar, 1 tsp liquid honey and pinch each salt and pepper. Stir in 2 cups coleslaw mix and 1 carrot, grated. Let stand for 5 minutes before serving. Makes 4 servings.

PER SERVING: about 111 cal, 1 g pro, 10 g total fat (1 g sat. fat), 6 g carb (1 g dietary fibre, 4 g sugar), 0 mg chol, 23 mg sodium, 78 mg potassium. % RDI: 4% vit A, 2% vit C, 7% folate.
