MAPLE MUSTARD BEER GLAZE

Nothing is more Canadian than beer, maple syrup and, as it turns out, mustard (our country is one of the top global producers of mustard seeds and accounts for 75 to 80 percent of global exports). Because this glaze is sweet, choose a beer that’s hoppy and slightly bitter. 1 cup beer (such as IPA or pale ale) ½ cup maple syrup 2 tbsp grainy mustard

In skillet, bring beer, maple syrup and mustard to boil over high heat. Reduce heat to medium; cook, stirring often, until mixture is thick and measures about 1 cup, 10 to 15 minutes. Glaze will thicken as it cools. If glaze is too thick, stir in 1 to 2 tbsp warm water before using.
