GREEK BEEF PITAS

MAKES 4 SERVINGS

Easy Tzatziki quarter English cucumber, seeded 1 cup 2% plain Greek yogurt or sour cream 2¼ tsp garlic powder 1 tbsp lemon juice Pitas 1 tsp olive oil 454 g lean ground beef half red onion, chopped 2 tsp garlic powder 2 tsp dried oregano 2 tsp grated lemon zest ½ tsp each salt and pepper ½ cup chopped fresh parsley or fresh mint 3 tbsp lemon juice 4 Greek-style pitas, lightly toasted 16 cherry tomatoes, halved 2 cups packed baby spinach or baby kale

Easy Tzatziki Grate cucumber; wrap in clean tea towel, then squeeze to remove excess liquid. In small bowl, stir together cucumber, yogurt, garlic powder and lemon juice. Set aside.

Pitas In large nonstick skillet, heat oil over medium-high heat; sauté beef, red onion, garlic powder, oregano, lemon zest, salt and pepper, breaking up with spoon, until beef is no longer pink, 5 to 6 minutes. Remove from heat; stir in parsley and lemon juice.

Spread each pita with Easy Tzatziki; top each with beef mixture, tomatoes and spinach. Season with salt to taste. Serve warm.
