ROASTED SLICED SQUASH WITH PAPRIKA

MAKES 4 SERVINGS HANDS-ON TIME 10 MINUTES TOTAL TIME 30 MINUTES

2 tbsp olive oil

1 clove garlic, finely chopped

1 tbsp grated fresh ginger

1 tbsp paprika

2 small butternut squash (about 500 g each), peeled and seeds removed salt and pepper

Preheat oven to 425°F. In small bowl, combine olive oil, garlic, ginger and paprika; set aside. Cut squash lengthwise into 1-inch thick slices; place on parchment paper-lined baking sheet. Brush with reserved oil mixture; season with salt and pepper. Bake, turning halfway through, until squash is tender, 15 to 20 minutes.
