CLEMENTINE MINI TRIFLES

MAKES 8 SERVINGS HANDS-ON TIME 15 MINUTES TOTAL TIME 1¼ HOURS

2 cups 35% whipping cream

⅓ cup maple sugar (approx)

¼ cup icing sugar

8 clementine­s, peeled

1 cup graham cracker crumbs

Using electric mixer on medium speed, beat cream, maple sugar and icing sugar until stiff peaks form.

Reserve 8 clementine segments; set aside. Chop remaining segments. In eight 1-cup glasses, layer graham cracker crumbs, half of the whipped cream mixture, chopped clementine­s and remaining whipped cream. Refrigerat­e for 1 hour. To serve, garnish each serving with a sprinkle of maple sugar and a reserved clementine segment.
