Instead of reaching for a packaged bar or muffin to satisfy a sugar craving, try this creative PB power pocket, to energize your day or reward yourself in a kind way after a hard run. This delicious and satisfying snack freezes well and will stay fresh for a long period of time since it’s vegan. This sweet creation is primarily comprised of clean burning fuel (i.e., carbohydra­tes), healthy fats, good quality protein and is high in fibre and potassium: all things an active individual should strive for when making a decision about their next snack.

SERVES 10 PREP TIME 5 minutes COOKING TIME 10 minutes EQUIPMENT Food processor, muffin pan, parchment paper or muffin wrapper, large mixing bowl, spoon, food scale.

Ingredient­s

12 tbsp (180 g) natural peanut butter 1 cup dry large flake oatmeal 8 tbsp (40 g) cocoa powder 160 g (approximat­ely 32 pieces) chewy banana bites

(found in some grocery stores and in the Bulk Barn) 4 tbsp (60 ml) maple syrup 60 g freeze-dried banana pieces or chips 500 ml (2 cups) unsweetene­d, plain almond milk

Directions

1. Place oats, chewy banana bites and almond milk in a food processor. Grind at a high frequency until the oats and banana are well ground up. 2. Add in peanut butter and maple syrup and pulse until mixed in. Add in cocoa powder. Pulse again until everything is well mixed. Add in the banana chips last. If you want a smooth consistenc­y, pulse in the banana chips as the last step. For a crunchy consistenc­y, add in the banana chips last in a mixing bowl with a spoon. 3. Measure out into 10 equal portions in a muffin tin lined with either parchment paper or muffin tin wrappers. Freeze immediatel­y. 4. The consistenc­y is best when consumed about an hour after taking it out of the freezer. If at room temperatur­e, enjoy with a spoon.
