Dave Fau­teux used to be into Pro­hi­bi­tion-era cock­tails, but lately, his in­spi­ra­tion has jumped ahead by a few decades: “I’m re­ally start­ing to ex­per­i­ment with tiki-style drinks with lots of dif­fer­ent fruits and lots of syrups.” When it comes to mak­ing the syrup for this drink, he has one im­por­tant tip: “Put the nut­meg and cin­na­mon in a tea in­fuser, let it steep and then add the clove at the end so it doesn’t take over.”
