Dave Fauteux used to be into Prohibition-era cocktails, but lately, his inspiration has jumped ahead by a few decades: “I’m really starting to experiment with tiki-style drinks with lots of different fruits and lots of syrups.” When it comes to making the syrup for this drink, he has one important tip: “Put the nutmeg and cinnamon in a tea infuser, let it steep and then add the clove at the end so it doesn’t take over.”
