A red icewine might seem the ob­vi­ous choice for a dessert made with ripe On­tario plums and blue­ber­ries, but these shoot­ers (recipe on page 158) aren’t very sweet at all, so let’s go with some­thing more sub­tle. Ice Cuvée is a tra­di­tional-method sparkling wine fin­ished with a dosage of Vi­dal icewine—a bril­liant idea that adds a touch of sweet­ness and some ex­otic lemon mar­malade and pineap­ple nu­ances to the bub­bly. A unique On­tario prod­uct, the wine is best served well-chilled, in Cham­pagne flutes—the per­fect pre­sen­ta­tion if some­one wishes to pro­pose a toast. Cheers!
