It’s a classic pairing with the tapenade that tops the goat cheese soufflés, and a delicious contrast with the earthy notes of the rustic root mash. Creekside Sauvignon Blanc VQA (LCBO 620724, $15.95) offers lively acidity, and stands up well to the intensity of the rapini’s gremolata butter and the salad’s lemon vinaigrett­e. From Chile, Errazuriz Estate Series Sauvignon Blanc (LCBO 263574, $14.10) is brimming with citrus and apple flavours. Our red choice is Angels Gate Gamay Noir VQA (LCBO 107714, $14.10). Its light-to-medium body and fruity character are a perfect foil for the smoky notes of the roast pork, and it’s also a good match for the side dishes.
