A delicate start belies a rich, mineral finish

Soave 2012, Monte Grande, Pra, Italy white, $30, SAQ #12132140. This is one of those wines that you need to be patient with. First sip and it shows delicate fruit — apple, lemon, peach. But with each successive sip, the minerality builds, until it completely dominates the wine. Surprisingly rich on the finish as well. White wine fans, this is a must. Serve at 8-12 C. Drink now-2018. Food-pairing idea: apéritif, pan-fried scallops, boiled lobster.
