OREGANO CUBED POTATOES

2 medium uncooked potatoes, peeled and cubed 2 tbsp lemon juice 51/ tsp olive oil 2 1 garlic clove, minced 11/ tsp minced fresh oregano 2 or / tsp dried oregano 12 / tsp salt 12 / tsp pepper 18

Prep Time: 10 minutes Bake Time: 45 minutes Yields: 2 servings 1. In a bowl, combine all of the ingredient­s. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 425°F for 45-50 minutes or until tender, stirring twice.
