PEPPER AND SOY TOFU
Serves: 6
■ 2 blocks firm tofu (12 to 14 oz/340 to 396 g size)
■ 5 tbsp (75 mL) soy sauce
■ 2 tbsp (30 mL) sesame oil
■ 1 tbsp (15 mL) liquid honey
■ 3 cloves garlic, crushed
■ 2 tbsp (30 mL) peppercorns, coarsely ground
■ Vegetable oil
■ 8 green onions, cut in 1 1/4-inch (3-cm) lengths
1. Press surplus liquid from tofu and cut into large cubes
(1 1/4 inches/3 cm).
2. In a large bowl, combine soy sauce, sesame oil, honey, garlic and pepper. Place tofu cubes in marinade, turning to combine well. Set aside for 30-60 minutes.
3. Preheat grill or griddle pan. Just before grilling, coat grill or pan lightly with oil.
4. Thread cubes of tofu on six metal skewers, alternating with green onions.
5. Grill skewers for 15-20 minutes, turning a few times so they cook evenly. A fish slice or egg lifter can be used to lift skewers off the grill, as they may stick a little.
