Taking it slow for breakfast

Q Would you have a recipe for a slow cooker breakfast dish that has no pork in it?

A Grease your slow cooker. In a frying pan heat 1 tbsp. olive oil. Cook, peel and slice one Yukon potato and one onion. Fry about seven minutes until browned, then add to slow cooker. Add half tsp. of paprika. In a bowl, whisk together: 12 eggs, 1 tsp. hot sauce, salt and pepper to taste, 2 ounces of goat cheese, and half a cup of diced canned tomatoes. Pour the egg mixture over the potatoes. Close lid and cook on low until eggs are set, about 4 hours. Option: Add half a cup of cooked and diced chicken to the mixture. Enjoy!

I have another solution if you are tired of fighting with hard butter out of the fridge. I use an empty 907-gram margarine container, put in 1/2 pound of butter, let it soften, add 454 grams of soft margarine, then blend the two with a whisk. The mixture spreads very nicely on toast right from the fridge — though it may require a minute or two if wanting to butter fresh-baked bread. The way I look at it is, if there are benefits to butter and/or margarine, I get them both.

To keep cheese fresh, wash a box and line the bottom with a paper towel. Add one tablespoon vinegar, top with a layer of wax paper. Cheese will keep fresh indefinite­ly.

My best barbecue meal includes bacon, onion and ground beef. Take the entire first layer off an onion. Roll a portion of ground beef into a ball the size of a golf ball and place the beef inside of the onion as a cover. Wrap the beef/onion ball with strips of bacon and fasten with toothpicks that have been soaked in water. Grill until cooked through.
