A peek inside the Lidstone pantry

Hi everyone! To continue my quest of simplifyin­g your everyday cooking routine, I’ve decided to share the necessary contents of my pantry for ‘on the spot’ meals. You’re invited to message me on my Facebook business page (Traiteur Lidstone Catering) if you have any specific questions.

Let’s start with herbs and spices. I find that smaller local businesses often have the best varieties and prices.

Here are my staples. (Dry):

Cumin, Coriander, Curry spice, herbes de Provence (or a mix of aromatic herbs such as Rosemary, Thyme, Sage ),

Oregano, Basil, Bay leaves, dry mustard (Keens brand) Garlic and Onion powder, Smoked Paprika, Cajun seasoning, Cayenne pepper, Chili powder and flakes. In a pinch, I cheat a lot with Montreal Steak spices and Italiano seasoning which I find have a good balance of many of the above.

For canned goods I am always sure to have diced or whole tomatoes, tomato sauce and paste, chickpeas, bean medley or your favorite legume, coconut milk, condensed milk and a variety of canned soups (mushroom, celery and tomato).

Knorr brand demi glaze or brown sauces are useful to add to pan sauces you may be making as an easy way to thicken them.

In bottles, I carry olive oil, canola oil and sesame oil, Balsamic, Apple cider and Red wine vinegars, Worcesters­hire, Sriracha (or favorite hot sauce), Knorr brand liquid chicken and beef stock, maple syrup and honey.

I try and have heavy cream, Fleur D’ail (fermented garlic scapes) and lemon juice in my fridge.

Considerin­g most of these items are non perishable, they are good staples to keep to make everyday cooking easier. I use a different combinatio­n of all of these to make curries, Chili, stews, soups, marinades, vinaigrett­es etc. And over time you’ll notice how they are often used together. If this interests you it may be a good check list for the next time you restock.
