Cameo Cherry Cupcakes

I made these cherry cupcakes, decorated with cameo chocolates for Mother’s Day. If you like cherries, you’ll LOVE these cupcakes.

I got this recipe from an old Five Roses cookbook. A cake recipe, that I adapted for cupcakes. It yields 11 large cupcakes,

or 12 medium cupcakes.

1 1/2 cups flour

2 tsp baking powder

1/2 tsp salt

1/3 cup butter

3/4 cup sugar

2 eggs

1/4 cup milk

1/4 cup cherry juice

1 cup maraschino cherries, sliced in half.

Whisk together the powder and salt.

Toss the cherries in a tbsp of flour and add them to the flour mixture.

With a mixer, cream the and sugar, adding the eggs.

Combine the cherry juice and milk together in a measuring cup.

With a wooden spoon, mix the flour and butter mixes together,

alternatel­y, with the milk and cherry juice.

Do not overmix, as

flour, baking it butter will cause tough cupcakes.

Fill the muffin paper lined pan. An ice cream scoop works well to fill the pans, or use 2 spoons.

Bake about 20 minutes or when a toothpick inserted in the middle comes out clean.

There’re not pretty delicious!

For the frosting, I used Betty Crocker Whipped Frosting.

I added 2 tsp. cherry juice and 1 drop of red food colouring.

I decorated the middle with cameo chocolates.

I’m not a pro at decorating with frosting.

Congratula­tions to Diane (née Kerr) and Biman Das of Bedford, Nova Scotia on the occasion of their 50th wedding anniversar­y. The effervesce­nt nurse (Diane) and the debonair engineer (Biman) met in Montréal, and after a courtship that spanned the globe were married May 9, 1970 in our mother’s hometown of Richmond, QC. Since then our parents’ story has become the stuff of legend and each complement­s the other in small and profound ways. For example, our father loves growing roses while our mother loves clipping them to give away. Our mother is a very creative prankster (who can forget the April Fool’s Day when our father’s banana trees suddenly grew bananas overnight) while our father is a very unapprecia­tive victim (our father’s screams of “DIANE” and our mother’s accompanyi­ng laughter is part of the soundtrack of our childhood). Together they share and live the same values of family, hospitalit­y and finding the fun in every day life. If you have been lucky enough to attend a Das party at their home in Bedford, Nova Scotia or the cottage (“Au Ciel”) in the Eastern Townships of Quebec, you will have seen these values in action.

We wish our parents all the best and send them our endless thanks and 50 hugs until we can deliver them in person.
