This pretty book is as much a product of Moore’s Thai roots in a farming community in northern Thailand, her time spent in Hong Kong as a restaurate­ur, as it is her new London home and the dishes she serves at her acclaimed restaurant Rosa’s Thai Cafe. Featuring more than 100 recipes, Moore takes on the classics — papaya salad, tom yum, penang gai — and suggests new dishes (in honour of the Cornish pasty, she stuffs Kra Pow in puff pastry).
